Every major free GIF converter — Ezgif, CloudConvert, GIPHY's converter, IMG2GO — works by uploading your video to their server, converting it there, and sending the result back. That's normal for most of them, and it's how they can offer heavier processing. But it also means your video, however personal, passed through someone else's infrastructure to become a GIF.
GifKit does the whole conversion using your browser's own video decoding and a GIF encoder that runs locally — nothing is sent anywhere. The tradeoff is that it's bounded by your own device's processing power, so very long or very high-resolution videos will take longer than they would on a beefy server. For the short clips GIFs are actually made for, that's rarely a real limitation.
